Pecorino Romano is a hard, salty Italian cheese, one of Italy's oldest cheeses made with sheep's milk. Pecorino is an ideal grating cheese, rich enough to melt into any number of pasta dishes you might use it with. Its similar to the Parmesan but holds its own identity from its traditional fairly ancient recipe.
